SHREDDED BEEF BARBACOA
Barbacoa is an authentic Mexican dish typically made with Beef, Goat or Lamb that has
been slow-cooked over an open fire until fall-apart tender. It is traditionally seasoned
with dried chilies and spices. I am using a Pressure Cooker here to achieve that
tenderness in about an hour or you can use a slow cooker on high for 10 hours. This
Shredded Beef is ABSOLUTELY To-Die-For! This dish is relatively spicy. Reducing the
Chipotle Peppers (even to zero) will adjust the Spiciness. It easily lends itself for use in
Tacos, Burritos, almost anything Spanish, it can even be used as a 4 star Pizza Topping.
